About 6-7 years ago, I started getting very ill all the time. Slowly the food groups and types that I was able to eat shrank. I had no idea what was going on. A while later, I read about wheat intolerance and celiac disease.
I started cutting things out of my diet, and it was like a light went on! I felt good, no more symptoms, but I have had to be very careful. Now, I watch everything I eat and read every ingredient. Soon, I was bored at just eating rice and veggies. So I though to my self….El, you can cook. SO COOK!
Hence, this blog and my recipes. I can enjoy my favourite foods by revising and substituting how they are prepared etc., and I hope you will too!
